Khawkhasi — Unpolished Red Rice from the Khasi Hills
Uncooked, the grain is a deep brick red with a paler streak where the husk was knocked off. It smells faintly of dry hay. Cooked, it turns a soft plum-brown, the grains sitting close together rather than falling apart, with a nutty taste that is closer to a whole grain than to white rice.
