The best oil for mango pickle is cold, wood-pressed (kachi ghani) mustard oil. It is more pungent and flavourful than refined mustard oil, and that pungency also helps the achaar keep. Refined mustard oil, processed at high heat, makes a flatter pickle.

The label says "mustard oil." The question is which kind.

A good aam ka achaar was never complicated. Sun-dried raw kairi, hand-ground spices, salt, and the darkest, sharpest mustard oil from the local kolhu, sealed for the season. No additive list. So why do two jars both labelled "mustard oil" taste so different?

Most of the answer is the oil — and most buyers never check it. This is a plain guide to the four things that decide a mango pickle: the oil, the spices, the mango, and what (if anything) is added to make it last.

Best oil for mango pickle: kachi ghani vs refined

Refined mustard oil is solvent-extracted: the seeds are crushed, treated with a solvent, heated hard, then bleached and deodorised. What comes out is pale, mild, and shelf-friendly — and most of the mustard character is gone (McGee, 2004).

Kachi ghani (wood-pressed) mustard oil is pressed cold, below about 50°C, in a slow wooden ghani. It comes out dark, thick, and sharp enough to catch your nose. That sharpness is the mustard's natural pungent compound (allyl isothiocyanate), released when the seed is crushed (Belitz et al., 2009).

For mango pickle that pungency does two jobs. It carries the flavour — the deep, warming, slightly bitter note of a proper Prayagraj-style achaar is the oil, not the spice. And it helps the jar keep: the same pungent compounds that sting your nose also discourage the microbes that spoil food, which is part of why a traditional oil pickle lasts without additives (Belitz et al., 2009). The practical test: read the oil line on the back of any mango-pickle pack. "Wood-pressed" or "kachi ghani" means the traditional oil. "Edible vegetable oil," or just "mustard oil" with no further detail, usually means refined.

Spices for mango pickle: whole vs factory powder

Open a jar of proper aam ka achaar and you can see the spices — whole mustard seeds, split fenugreek (methi dana), pieces of turmeric, whole red chilli. Coarse, uneven, visible.

Factory pickle is a uniform orange-brown powder coating every piece identically. The reason that matters: whole spices hold their volatile aromatic oils until they're crushed, and those oils are at their peak the day the seed cracks open. Pre-ground powder sitting in a warehouse for months has lost much of that (Belitz et al., 2009).

The real list is short: rai (mustard seeds), methi (fenugreek), haldi (turmeric), lal mirch (red chilli), salt — five or six things. When a label runs to twelve or fifteen entries including "acidity regulator" and "permitted preservatives," that is a processed food shaped like achaar, not achaar.

Best mango for achar: which aam works, and why

Not every mango makes good pickle. You want it raw, firm and sour — in Uttar Pradesh and Bihar that's Desi Kairi (small, hard, intensely sour) or Rajapuri; in the south, Totapuri or Natu Mamidi for Avakkai.

The common mistake is using a semi-ripe or sweet mango. As a mango ripens, its sugar rises and its acidity drops — and it's that acidity that helps the salt-and-oil method hold (Sagar & Suresh Kumar, 2010). A sweeter mango turns the achaar mushy within weeks. The best kairi is picked early — March to April in Prayagraj — when the fruit is rock-hard and the sourness bites. Factory pickles rarely name the variety; they take whatever the mandi is cheapest on. The raw material decides the result before a single spice is added.

What about preservatives?

A traditional aam ka achaar in kachi ghani mustard oil doesn't need synthetic preservatives — the oil, salt and sun-drying do the work. Factory pickles built for years of shelf life often add permitted preservatives such as sodium benzoate or potassium sorbate. These are legal and FSSAI-permitted within limits (FSSAI, 2011).

Our choice is simply different: we don't use them. We rely on the old method — enough salt, real kachi ghani oil, proper sun-drying, and whole spices — the way it was done before any of these additives existed. If you'd rather buy a pickle made without them, the label tells you: look for "no added preservatives," and check the oil and ingredient list as above. Once you've found a real one, keeping it good is simple — a dry spoon and a cool, dark shelf.

How to read a mango-pickle label: a 5-point check

  1. Oil type. "Wood-pressed" / "kachi ghani" = traditional. Unspecified "mustard oil" or "edible vegetable oil" = refined. This one line tells you most of it.
  2. Ingredient count. Real achaar: five to seven items. Double digits = factory.
  3. Additive codes. Sodium benzoate, potassium sorbate, "permitted preservatives" — present or not is your call to make knowingly.
  4. Packaging. Glass jar vs thin plastic pouch tells you what the maker prioritised.
  5. FSSAI licence. Non-negotiable, homemade or factory — a licence number means food-safety compliance (FSSAI, 2006).

Why the real thing costs more

Genuine wood-pressed mustard oil costs several times what refined oil does. Hand-picked seasonal kairi costs more than bruised mandi fruit. Whole spices ground fresh cost more than months-old powder. A pickle that uses all three honestly cannot sell at commodity-pickle prices. That's the whole story of the price gap — you are paying for the ingredients, not the marketing.
